This quote from Lee Binz, The HomeScholar was so encouraging to me years ago when I was first trying to figure out the whole transcript thing.

It’s from her article on documenting “delight-directed” learning, where she lays out her sticky note technique for documenting and packaging up real life learning.

This isn't a technique I've used before, but her sticky note approach may fit your style.   Her steps on creating "affinity groups" is also another illustration on how you can group your child's interests and activities, over time, together to create a course credit.
